Tai Ma Sauce is a Hong Kong brand with a history stretching back more than 50 years. It is one of the rare “Made in HK” brands still standing today. “We only use the best ingredients, such as non-GMO soybeans from Canada and sea salt from Australia, dried naturally under the sun” says Mr. Zou, the third-generation soy sauce producers “we look for a rich in flavour with the perfect balance between soya, salt, and a scent of freshness.”
The old memories
Mr. Zou recalls his childhood memories: “Our grandfather started the shop in Shau Kei Wan. We sold to locals, who would bring their porcelain bowl and we would fill it with preserved bean curd sauce, for just 30 cents a bowl”. Later they started making snacks and sauces and business grew from there.
Like wine, soy sauces come in different qualities. ‘First extract’ is light in colour and taste. ‘Double Deluxe’ and ‘Supreme Shine’ are more premium brands and ‘Basin Soy Sauce’ is Tai Ma’s signature product: “We let this sauce mature for a few more weeks until its dark and tick and the salt crystals add a deep flavour”.
