Shanghai-style noodle factory
Chun Nam Noodle Factory was the first Hong Kong manufacturer of Shanghai noodles. Half of the current staff have been working here for more than 40 years, and witnessed the development of the entire Chun Yeung Street first-hand.
Hand-made with love
The noodles are still hand-made daily in the back of the shop, attracting a loyal stream of neighbourhood customers. “I wake up at 4am every day to prepare the noodles in time for the 7am shop opening. I only have two minutes for breakfast and often work fifteen hours a day” says Master Li with a smile.
Little Shanghai
In earlier days, many wealthy Shanghainese lived in North Point and noodle-makers here were all about quality than affordability. The reputation still stands today. Many celebrities come here for their noodle fix, including the wife of HK’s first Chief Executive Mr. Tung Chee-Hwa who is from Shanghai. “We don’t advertise much. Most of our orders come from shops, with whom we have been working for decades,” explains Master Li as he laments that no young people enter the noodle-making business. “What will the noodle factory look like after all the noodle masters retire?”
Drying noodles
Back in the old days, when there were no drying machines, Chun Nam used the most traditional way to dry noodles, “we used to bring the noodles to the rooftop on the fourth floor for drying.
